Ingredients
  1. 1 lb tomatillos, washed
  2. 1 1/2 cups white onion, chopped
  3. 1 bunch cilantro, chopped, including stems
  4. 7 cloves garlic
  5. 2-4 serrano chiles (or 1 jalapeno)
  6. 1/2 tsp sea salt
  7. 2 T olive oil
Instructions
  1. Roast tomatillos under broiler until black spots form on several sides (rolls them around occasionally). You could also do this on the grill.
  2. Place everything except oil in blender or food processor. Blend until smooth.
  3. Heat olive oil in saute pan (or cast iron) until hot and add puree.
  4. Bring to boil while stirring (so it doesn't glop all over), then reduce heat to simmer. Cook for about 10 minutes, or until bright green turns to a more olive green.
